Cous Cous is a foodstuff originating in the Maghreb which is now widespread all over the world. Versatile in its use, it is an excellent base for fish, meat or vegetable recipes. Our lime-flavoured version has a fresh, summery taste that is suitable for all seasons.

1 Place the couscous in a bowl, pour in the boiling broth and leave to stand covered for about 10 minutes.
2 Cut the pepper into cubes, and cook half of them in a pan with a drizzle of oil and salt.
3 Cook the other half of the pepper in a small pan with a pinch of salt and a glass of water for 10 minutes. Once cooked, blend it and correct the salt.
4 Bake peas in the microwave with a drop of water for 2-3 minutes at maximum power.
5 With a fork, shell the couscous, add the pepper, peas and salmon, season with lime juice, a drizzle of oil and grated lime zest. The couscous is then seasoned with the juice of the lime, a drizzle of oil and grated lime zest.
6 Orrange on the plate, decorate with Greek yoghurt and the pepper cream.
