The Madeleine is a typical French pastry in the shape of a shell with a texture similar to that of a plumcake but more buttery. Try our super-fast, light but equally tasty version;

1 Mix all the ingredients in a bowl with a whisk.
2 Take a madeleine mould, grease it with spray oil, place a teaspoon of mixture in the mould, add a raspberry cut in 2 and cover with another teaspoon of mixture.
3 Decorate with coconut flakes.
4 Bake at 170 degrees in a static oven for 12 minutes.
We can smell them just by looking at them...if you are good enough not to eat them all in one day, you can also use them as Christmas tree decorations!
